Watermelon Sorbet

1/4 cup lemon juice
3 cups seedless watermelon, pureed and strained

- Cook the sugar, water and lemon juice together, stirring occasionally until the sugar is dissolved.
- Remove from heat and let cool. Then transfer to the fridge to chill. This is important! Make sure it is thoroughly chilled otherwise it won't freeze up properly if you try to process it while it's still warm.
- Cut the watermelon up into 1 inch cubes and put into your blender.
- Puree until watermelon is liquified!
- Set a fine mesh strainer over a bowl and pour the puree through the strainer.
- Use a spoon or spatula to stir the puree and help it pass through the strainer. Eventually you will have nothing left but mostly chopped up seeds. Don't forget to scrape the bottom of the strainer though!
- Whisk together with the chilled syrup then process in an ice cream maker according to manufacturers instructions.
OR if you don't have an ice cream maker wash out your blender and use this process here!
